For Racing, Most tracks require a roll cage or hard top of some type.
You might want to verify that first, before you spend alot of money on a suspension you can not use on a track. Our sponsors sell the most common 2 Coil Overs systems B+G Saturn Sky Coil-Over Adjustable Suspension System Or KW 35262003 Pontiac Solstice Saturn Sky Coilover Variant 3 DDM makes a brace for the rear suspension/Axle that alot of people are very happy with.

Elf is correct about track days rules. Most require roll bars for convertibles, some even with hard tops.
A suggestion; assuming your chosen track allows you on, just go run the car and see what you think. The ABSOLUTE first money to spend will be on DOT 4 fluid and some serious brake pads. The stock fluid and pads are fine for the street, but you'll cook the stock fluid and pads in a very few laps.
